Squash Souffle

I am still in a squash kick! Here is a excellent recipe! Its not for the faint at heart! Sorry I need to watch my diet, but this one is'nt a diet conscious recipe!

2 pounds yellow squash, cooked and drained
2 onions chopped
1 cup mayo
12 saltine crackers ( about 1/2 cup crushed)
3 eggs beaten
1 small package of hidden valley ranch dressing
3/4 grated carrots
1 cup grated sharp cheddar cheese

Mix all ingredients together and place in casserole or baking dish.
Bake at 300 for 30minutes. Enjoy!
