Added July 16, 2014 One thing I have a hard time finding in this country is the traditional candy from my home country. Usually my cravings are calmed whenever a friend comes to visit because I always ask them to bring me sweets. Over time I've become inspired to recreate typical desserts. Some require more time or fresh ingredients that are hard to find here. Fortunately, one of my favorite desserts is eat to prepare and absolutely delicious. Candied plantains are typical in many areas in Colombia and other cities in Latin America, but its preparation varies by region. Ingredients4 ripe plantains pealed and cut down the middle1 block of unrefined cane sugar (panela or piloncillo)2 cinnamon sticks1 cup of water or enough to cover the...Read More
Today was like every other Saturday. Bountiful Baskets day. We get a ton of produce for just $15 with the co-op. I looked at all the fresh goodies we got this week. Aren’t they gorgeous! First I shucked the corn. If you haven’t done this before, simply tear off the husk. Then stand the corn straight up and slice downward with a knife. The corn slices right off. Then turn the corn and continue shedding it off. Next slice or chop the tomatoes, peppers, jalepeno, red onion, and avocado. Toss everything in a bowl, stir up the dressing, and pour over the top. Fold together gently. Fresh Corn, Avocado, Tomato Medley Ingredients3 fresh ears of corn1 red pepper1 green pepper½ jalepeno, seeded½ small red onion2 avocados3 roma tomatoes (or a...Read More

It's finally summer. Time to start making lasting summer memories! As a kid I would always look forward to summer trips, we camped out a lot.
The highlight of the day, when you were camping was walking to the country store and picking up an ice cold coke in a bottle and finding some kind of junk food you had never tried before and making sure you picked up the makings for s'mores for-later that night by the fire!
Driving on the summer trips were always fun. My dad would always stop by the same places while enroute to the camp grounds, so we learned quickly which stores had the best junk food and we would always beg to stop there!
