Easy Hamburger Pie

It's a rainy Sunday in Alabama, so it sounds like a good day for comfort food. You know the kind of food that makes you feel warm and fuzzy all over. Comfort food makes you feel protected and safe in this crazy world we live in, we can slow down and plunder in the cabinets and find a little of this and a little of that and come up with an inexpensive filling meal for your family without having to go out to pick up fast food or make a quick harried stop at the grocery, when you don't really want to even leave the house, this is what I call comfort food!

Easy Hamburger Pie

1 pound ground beef
1/2 small onion
1 can of tomato soup
1 can cut green beans
4 medium potatoes, mashed (prepared instant potatoes can be substituted)
1/2 cup shredded cheese

Brown ground beef and onions; drain, add salt and pepper to taste. Add tomato soup to beef, stir in green beans, and transfer to oven-safe dish.
Spoon mashed potatoes on top. Bake at 350 for 10-15 minutes or until the potatoes are crusty.
Sprinkle with cheese and serve. This will make 4 servings.
