St. Patrick's Day is right around the corner!!

Good Morning!
It's hard to believe that March is right around the corner, which means St. Patrick's Day will soon be here. I shared alot of recipes last year but have some new ones to share this year! Yes I do have a bit of Irish in me!
Enjoy and have a Happy Saturday. We have sunshine today. Here is a Irish Toast for your day: May your neighbors respect you, troubles neglect you, the angels protect you and heaven accept you!

 Best Ever Potato Soup

6 bacon strips, diced
3 cups cubed peeled potatoes
1 can (14 1/2 oz ) chicken broth
1 small carrot, grated
1/2 cup of chopped onion
1 tablespoon dried parsley flakes
1/2 teaspoon each of celery seed, salt and pepper
2 tablespoons all purpose flour
3 cups milk
8 oz cheese Velveeta cubed
green onions sliced thin (optional)

In a large saucepan , cook bacon until crisp, drain. Add potatoes, broth, carrot, onion, parsley, celery seed, salt and pepper. Cover and simmer until potatoes are tender, about 15 minutes.
Combine flour and milk until smooth, add to soup. Bring to a boil, boil and stir for 2 minutes. Add cheese, stir until cheese is melted and soup in heated through. Garnish with onions if desired. This will make about 8 servings. Enjoy!

What a nice soup, made with items I typically have on hand. Yummm..could eat this often!
Yes I love this soup. Its a comfort food! Adding cheese is a big plus!
