Southern Cooking at its Best!

When you think of southern food, what do you normally think about? Is it fried chicken with a side order of creamy homemade potatoes, complimented with a fat fluffy light buttermilk biscuit with a peach bubbling cobbler on the side for dessert? Here in the south we do like fried foods, rich foods and sweet iced tea!
Growing up I was used to fried foods, tons of  veggies and especially turnip greens and yes we ate grits for breakfast.
One of my favorite meals was Chicken n Dumplins! It takes a bit of time to make, but its the best comfort food around. I make this from scratch so its not really precise on the measurements, just a recipe handed down and adjusted to one's taste.

Chicken n Dumplins

Chicken breast (4) cooked
1/2  cup celery chopped thin
1/2 cup onions chopped fine
2-3 tablespoons butter
3 cans chicken broth
1 tablespoon corn starch
salt and pepper to taste

Place chicken breast in large pot with enough water to cover chicken and boil until cooked completely. Remove chicken from pot and chopped in to bite size bites. Place chopped chicken back into pot with the water. Add 3 cans of chicken broth.
In a sauce pan place celery and onions with 2-3 tablespoons of butter and saute until veggies are soft, then add to pot with Chicken. Bringchicken pot to a boil.  In a small bowl mix 1 tablespoon of corn starch with 3 tablespoons of water until well mixed. Add to the boiling water and stir.
At this time add salt and pepper to taste.

Dumplins

I use Bisquik. There is a recipe on the side of the box. I usually make two batches. You can use any type of biscuit mix, follow recipe for dumplins or biscuits.

Take prepared biscuit mix and roll out and cut into inch squares. Add dumplins one by one into pot but do not stir, this will only make the dumplins dissovle. Turn heat down to medium.
Add all dumplins to pot and cook until done about 15-20 minutes. You can tell when dumplins start looking fluffy. Stir now to make sure they are not sticking to the bottom. Let cool for 10 minutes and serve.
