St Patrick's Day Recipes

I can't believe its already time to make my St. Patrick's Day meal. I usually make potatoes with finely chopped green onions with a white cream sauce placed in the middle of the potatoes. Also on the menu last year was Corn Beef and cabbage and hot homemade Irish soda bread.

This year life has been going way too fast  with my new job.  I dont really have the time I have had in the past, so this year I am going simple.
It's going to be Reuben sandwiches, but I have found a really great recipe!

Toasted Reubens

1/2 cup mayo
3 tablespoons sweet pickle relish
1 Tablespoon  prepared mustard
1 Tablespoon prepared horseradish
8 slices rye bread
1 pound of thinly sliced corned beef
4 slices swiss cheese
1 can sauerkraut, rinsed and well drained
2 tablespoons butter
