Southern recipes!!

It's friday! Glad to have a end the work week, its been a long one, even if I do only work 4 10 hour shifts!
Today I am ready for more southern comfort food! What about you? Are you ready to start your weekend off with some relaxation and some home cook southern comfort food?

Let's start off with Angel Biscuit's then  finish up with a Pork Chop casserole.

5 cup plain flour
1/4 cup sugar
3 Tbsp Baking powder
1/4 cup warm water and 1 tsp sugar
1 pkg yeast
1 tsp soda
2 cup buttermilk
1 cup crisco

Sift dry ingredients together. Cut in crisco. Dissolve yeast in warm water and add with buttermilk to flour and crisco mixture. Mix well. Refrigerate 1 hour. Use hands, turn out into a floured cutting board. Roll  1/4 inch thick and brush with melted butter. -cut out with biscuit cutter and fold over. Place on greased baking sheet. Let rise for about three hours. Cook at  400 degrees for 15 minutes.

Pork Chops

6 pork chops
2/3 cup uncooked rice
1 cup water
1 cup of whole kernel corn
1/2 cup chopped onion
1 can tomatoes
2 tsp salt
1/4 tsp pepper

Brown pork chops. Drain grease. Lift out of pan. Spread rice over bottom of skillet. Add water. Sprinkle with 1 tsp of salt. Arrange chops over the rice. Sprinkle with the 1 tsp of salt. Add onion and tomatoes. Spoon on the corn. Sprinkle with black pepper. Cover and simmer 25-30 minutes or until the rice is tender. Add a small amount of water should mixture cook dry. Serves 6.
