Start your year off right with a fresh, vibrant salad. This delicious spinach salad is chock-full of superfoods—walnuts, blueberries, spinach, edamame—whole foods that help your body stay healthy and get vital nutrients for optimum health.
12 cups Spinach
1/2 cup Edamame, shelled and thawed
1/2 cup Blueberries
1/2 cup Raspberries
1/4 cup Gorgonzola, crumbled
1/2 cup walnuts
5 tbsp Brown sugar
1/4 tsp Salt
1/3 cup + 1 teaspoon apple cider vinegar
1/4 cup White onion, very finely chopped
1/4 Light olive oil
1) Tools Needed: Good Cook Salad Spinner
2) Clean spinach in the salad spinner. Remove spinner and place spinach inside the clear plastic bowl for serving. Toss with blueberries, raspberries, avocado, and gorgonzola.
3) In a small saucepan, heat walnuts, 2 tablespoons brown sugar, ¼ teaspoon salt, and 1 teaspoon of cider vinegar together over medium-high heat until the brown sugar begins to caramelize (about 3-4 minutes). Transfer to a small piece of parchment, allow to cool completely before tossing on top of the salad.
4) In a blender, combine vinegar, onion, olive oil, and remaining 3 tablespoons of brown sugar. Blend until pureed. Drizzle over salad and serve immediately.
