One Dish Lunch

One dish Lunch 1 (10oz) pkg frozen chopped broccoli 1 (10 3/4 oz) can Cheddar cheese soup 1 (6 3/4 oz) can Tender Chunk ham, flaked with fork 1 cup of cooked rice 1/2 cup sour cream 1/2 cup of buttered bread crumbs Preheat oven to 350. Cook broccoli until tender. Drain well. Stir in soup and sour cream together. Add all remaining ingredients to soup mixture. Spoon into 1/2 quart casserole dish that has been greased. Top with bread crumbs and bake for 30 -35 minutes. Serve hot.

Yankee Doodle Apple Dessert

This is a really good recipe with a plop of vanilla ice cream on top! Yankee Doodle Apple Dessert 1/2 cup sifted cake flour 3/4 firmly packed light brown sugar 1 tsp baking powder 1/4 tsp salt dash of cinnamon 1 egg 1/2 teaspoon vanilla 1 cup chopped tart apples 1/2 cup chopped walnuts or pecans Mix and sift the first 6 ingredients. Stir in unbeaten egg and vanilla. Fold in the apples and walnuts. Turn in to a well greased 8 inch pie pan. Bake at 350 for 25-30 minutes or until brown and crusty. Top with whipped cream and a dash of cinnamon and small scoops of vanilla ice cream.
