Irish Champ

I found this recipe several years ago on Allrecipes.com. This is my hubby's favorite! Enjoy! 2 pounds potatoes, peeled and halved 1 cup milk 1 bunch green onions, thinly sliced 1/2 teaspoon salt, or to taste 1/4 cup butter 1 pinch freshly ground black pepper to taste DIRECTIONS Place potatoes into large pot, and fill with enough water to cover. Bring to a boil, and cook until tender, about 20 minutes. Drain well. Meanwhile, heat the milk and green onions gently in a saucepan, until warm. Mash the potatoes, salt and butter together until smooth. Stir in the milk and green onion until evenly mixed. Season with black pepper.

Irish Corn Bread

2 cups all-purpose flour 1 cup yellow cornmeal 1/3 cup sugar 4 1/2 teaspoons baking powder 1 1/2 teaspoons salt 1 1/2 teaspoons cayenne pepper 1/2 cup shortening 1 1/2 cups milk2 eggs, beaten 4 1/2 teaspoons hot pepper sauce Preheat oven and skillet to 400 degrees In a large bowl,mix together flour, cornmeal, sugar, baking powder, salt, and cayenne pepper. Cut in shortening until the mixture resembles coarse bread crumbs. In a small bowl, beat together milk, eggs and hot pepper sauce. Stir milk mixture into the flour/cornmeal mixture until just blended. Remove hot skillet from oven, spray with non-stick cooking spray and pour batter into skillet.Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of loaf comes out clean.

Irish Tea Cake

I tried this last year. It is great with hot tea or coffee after dinner. I originally found this recipe on Allrecipes .com. Irish Tea Cake 1/2 cup butter, softened 1 cup white sugar 2 eggs 1 1/2 teaspoons vanilla extract 1 3/4 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup milk 1/4 cup confectioners' sugar for dusting DIRECTIONS 350 degrees. Grease and flour a 9 inch round pan. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time then stir in the vanilla. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added. Pour batter into the greased pan. Bake for 30 to 35 minutes, until a toothpick inserted into the center comes out clean. Dust with confectioners' sugar right before serving.

3 cups of cooked Hot mashed sweet potatoes 1/2 cup butter 1/3 cup of milk 1 tsp vanilla 2 eggs 1/2 cup sugar 1/2 tsp lemon juice Mix all ingredients, put into a large buttered casserole baking dish. Top with topping. Topping 1/3 cup butter, melted and cooled 1 cup chopped pecans 1 cup brown sugar 1/3 cup flour. Mix all together, spread over potatoes in casserole dish. Bake 350 for 30 minutes. Enjoy!
