Its Fall so lets bring on the soup!

There is nothing better in the fall then a warm piece of bread to dip in a hot cup of soup!
Here is a great soup that has fall written all over it! I usually buy a long loaf of French bread at Walmart or Publix. I love homemade bread!

Minestrone Soup

1 lb Italian sausage
1 Tbsp oil or vegetable oil
1 cup diced onion
1 clove garlic, minced finely
1tsp crumbled basil
1 cup of carrots, sliced
2 small zucchini, sliced
1 16 oz can tomatoes, chopped , undrained
2 (10 -3/4 oz cans of beef bouillon
or 3 beef bouillon cube plus 1 1/2 cup of hot water
2 cup finely shredded cabbage
1 tsp salt
1/4 tsp pepper
1 16 oz can of Great Northern beans, undrained.

Slice sausage crosswise, brown in oil in deep sauce pan, Add onion, garlic, carrots and basil and cook for 5 minutes. Add zucchini, tomatoes wth liquid, bouillon, cabbage, salt and pepper. Bring soup to a boil, heat and simmer, covered for one hour. Add beans with liquid, cook for another 20 minutes. The soup is even better the second day! This should make a good 8-10 servings.
