Pepper Jelly

With gardening upon us I wanted to share with you Pepper Jelly recipe. Its really good and easy to make. Pepper Jelly 3 large bell peppers, ground to make 1 cup 6 hot peppers, ground to make 1/2 cup 6 1/2 cup sugar 1 1/2 cup vinegar 1 bottle pectin 6-9 drops food coloring, depending on color of peppers you use. Boil pepper, sugar and vinegar for about 3 minutes. Strain. Bring juice to a boil: add liquid pectin and BOIL ONE MINUTE. Pour into jars and seal. Yield : 7 half pints. Enjoy!

I found this in "The art of Aromotherapy", this can help with motion sickness in the car. Make a soft neck cushion and fill it with: 1/4 cup peppermint 1 tablespoon mint-scented pelargonium (mint scented flower) 1 tablespoon lemon verbena 1/4 cup lavender 1 tablespoon of crushed lemon zest

Emergency Recipe Substitutions

It never fails you cooking and suddenly you realize your do not have a certain ingredient. I found this wonderful list a few years ago. Its helped me alot, hope you can you help you sometime! 1 square of chocolate =3 tablespoons cocoa + 1 tablespoon butter 1 tablespoon cornstarch (for thickening)=2 tablespoons flour 1 cup buttermilk=1 cup yogurt 1 cup sour milk=1 cup milk+1 tablespoon lemon juice or vinegar 1 cup cake or pastry flour=1 cup all purpose less 2 tablespoons 1 teaspoon baking powder=1/4 tsp baking soda+1/2 tsp cream of tartar 1 cup sugar=1cup honey(use 1/4 cup less liquid in recipe) 1 cup brown sugar=1 cup granulated sugar 1 cup oil=1/2 pound butter or margarine 1 tablespoon prepared mustard=1 teaspoon dry mustard 1 clove garlic=1/8 teaspoon garlic powder

Happy Mother's Day!

Happy Mother's Day to all Moms! Sorry I haven't posted lately, my daughter has been sick. We found out this weekend she has strep throat and walking pneumonia. Now she is on antibiotics and is slowly starting to feel better, but she has really been a sick kid.
