Pepper Jelly

With gardening upon us I wanted to share with you Pepper Jelly recipe. Its really good and easy to make.

Pepper Jelly

3 large bell peppers, ground to make 1 cup
6 hot peppers, ground to make 1/2 cup
6 1/2 cup sugar
1 1/2 cup vinegar
1 bottle pectin
6-9 drops food coloring, depending on color of peppers you use.

Boil pepper, sugar and vinegar for about 3 minutes. Strain. Bring juice to a boil: add liquid pectin and BOIL ONE MINUTE. Pour into jars and seal. Yield : 7 half pints. Enjoy!
