Recipe for the day! Chicken n Dumplings

I am trying to get over a head cold today, so this recipe sounds really good to me.It is made from memory so there really isn't a recipe, so if you have any questions please ask! I will be happy to help you out.

Chicken n Dumplings

You will need to have on hand: Chicken ( 4 chicken breasts-skinless)
Celery -two stalks chopped
onion -1/2 cup -chopped
2 cans of chicken broth
salt to taste
pepper to taste
1 table spoon of corn starch added to 1/4 cup of water. (see directions below on when to add).
1 box of biscuit mix
2-3 tablespoons of butter
3 cups of water

Put chicken breasts in 3 cups of water, add chicken broth.
In a fry pan combine chopped celery and onions and butter and saute.
Once the celery and onions are sauteed add to chicken.
Add salt and pepper to taste.

While chicken is cooking make up two batch's of biscuits from the biscuit mix.
Roll out flat and cut into strips. Cut strips into small squares and add to water. Add all dumplings into pot. Cover pot. Do not stir until dumplings are almost done ( you can tell this when dumplings start to surface in the water) If you stir too soon dumplings can separate. Once dumplings are almost done. In a small bowl mix 1 tablespoon of corn starch with 1/4 of water, mix well, then add this to the pot. This will thicken the soup. The total cooking time should be about 20 mins. Make sure you cook on medium heat.
Enjoy! This recipe was handed down, sorry it is not a precise recipe. But it is really comforting on a cold winter's day!
