My hubby found a recipe he is wanting to try. This recipe was found in Family Circle (March 09 issue).
This sounds like a cost effective dinner. Most of the ingredients I already have on hand.

Easy Chicken Bake
1 pkg of Stove Top stuffing mix for Chicken
1-1/2 pounds of chicken breast, cut into 1 inch pieces
1 can condensed cream of chicken soup
1/3 cup sour cream
1 bag of frozen mixed veggies
Preheat 400 Prepare stuffing mix as directed on package, set this aside.
Mix chicken, soup, sour cream adn veggies in a 13 x 9 inch dish, top with stuffing,
Bake for 30 minutes or until chicken is cooked through.
I will be sure to let you know how my family likes this new dish!
