Here is another sweet Irish recipe to enjoy.
1 medium potato
1 box powdered sugar
1 small jar of peanut butter
Boil potato until done. Take peeling off and mash potato. Mix powered sugar with potato until mixture is thick enough to roll out.
( It may take up to 1 1/2 boxes to reach the right consistency)
Sprinkle dough board with powered sugar. Roll out dough and spread with peanut butter. Roll ( like a jelly roll), and wrap in wax paper. Refrigerate until roll is cool enough to slice.
If you would like you can add green food coloring after you mash potato for the Irish Holiday.
