skillet potatoes with bacon and cheese

I found this in Kraft food and family! A easy dish to fix in a hurry!

4 slices of bacon
1 onion chopped
2 lb of potatoes ( about 6) cut thin
1 cup of cheddar cheese
2 Tbsp sour cream

Cook bacon in a large skillet on med heat until crisp. Remove bacon, reserving 3 Tbsp of drippings. Drain bacon on paper towels. Add onions to skillet, cook and stir 5 min. Stir in potatoes and cover. Cook on med heat for 20-25 mins, until tender. Top with cheese, bacon and cover until cheese is melted. Add sour cream on top. Enjoy!

There is NO way I could ever use just 2 tbsp of sour cream with ANYTHING! LOL
