Spicy Roasted Vegetable Soft Tacos

  medium zucchini, sliced
 
 1  medium onion, cut into 1/2-inch wedges
 
  large red or yellow bell pepper, cut into
1/2-inch strips
 
 1  package (1oz) Old El Paso™ Taco
Seasoning Mix
 
  can (10oz) Old El Paso™ Red Enchilada
Sauce, Mild or Medium
 
  can (10oz) Ro*Tel® Diced Tomatoes with Green Chilies, drained
 
 1  can (14.5oz) Hunt's® Petite Diced
Tomatoes, drained
 
  package (6.7oz) Old El Paso
Stand 'N Stuff™ Soft Flour Tortillas (8 tortillas)
 
 1/2  cup (2oz) KRAFT Natural Shredded
Cheddar Cheese
1.  Heat oven to 425°F. Place zucchini, onion and bell pepper in ungreased 15x10x1-inch pan. In medium bowl, mix taco seasoning mix, enchilada sauce and diced tomatoes; toss vegetables with tomato mixture.
2.  Bake 20 to 25 minutes, stirring occasionally, until vegetables are tender. Heat tortillas as directed on package. Spoon about 1/2 cup vegetable mixture into each tortilla; top with cheese and sour cream.
