Blue Bunny® Birthday Party Cake Cups Individual birthday cakes are a double treat with birthday party ice cream both in the cake batter and served on top! Difficulty: Moderately Easy Equipment: 8 (5 oz.) paper cups Prep Time: 15 minutes Makes: 8 servings Ingredients 1-2/3 cup yellow or vanilla cake mix with pudding (1/2 of a 15.25 oz. box) 1/3 cup Blue Bunny Premium Birthday Party Ice Cream 1/4 cup low-fat plain Greek yogurt 1/2 cup water 8 (1/4 cup) scoops Blue Bunny Premium Birthday Party Ice Cream Chocolate Sauce or Ice Cream Topping Instructions Coat insides of cups with non-stick cooking spray. In a mixing bowl, combine cake mix, 1/3 cup ice cream, yogurt and water; beat on Medium speed 45 seconds or until thoroughly mixed; pour a scant 1/4 cup into each prepared cup. Place 4 cups in a circle in a microwave. Cook on High 1-1/2 minutes or until top is slightly moist and a toothpick inserted in center is not quite dry.* Cakes will continue to cook after removing from microwave. Do not overcook or cakes will be dry. Cool completely on wire rack. Repeat with remaining cups. To serve: Top each each a 1/4 cup scoop of ice cream and drizzle with chocolate sauce.
